VEGETABLE STOCK
Vegetable Stock made with vegetable offcuts. It's delicious, healthy and costs nothing!

Ingredients
| Vegetable off cuts, for example: |

| Onion skins and off cuts |
| Garlic skins and off cuts |
| Celery |
| Carrots |
| Potato skins |
| Herb off cuts or left overs |
| Mushrooms |
| Pretty much any vegetable off cut or skins |
Instructions
Making vegetable stock
- Keep all vegetable off cuts in refrigerator until ready to use.
- Fill stock pot with water about ¼ from the top.
- Add vegetable offcuts.
- Stir occasionally.
- Keep at slow boil.
- When about 50% of liquid has evaporated, the stock should be ready.
- Strain liquid from vegetable (use China Cap strainer or similar).
- Refrigerate or freeze stock until ready to use.
