Okra Curry

OKRA CURRY

Okra is not everyones favorite vegetable!
Try this!  
A beautiful creamy curry that works well in a banquet or served hot with rice.

Ingredients


1 lb fresh okra
1 tbs ghee or oil
1 large onion - thinly sliced
2 fresh green chilies - slit in half and seeded
1 tbs finely chopped garlic
1 tbs grated fresh ginger
1 tsp ground turmeric
1 tsp ground coriander
1 tsp ground cumin
1 ½ cups coconut milk
1 tsp salt

Instructions


  • Wash okra and cut stems off - leave okra whole.
  • Heat ghee or oil in a heavy based pot and add onions and chilies.  Cook onions until they are golden, stirring so they don't stick or burn.
  • Tun heat down to low and add garlic, ginger, spices and salt.  Stir well and let dry (but don't burn)!
  • Add okra and stir through onions and spices.
  • Add coconut milk, stir well and cover.
  • Cook until okra is tender (about 10 minutes).
  • Serve hot with rice.
