OKRA CURRY
Ingredients
| 1 lb fresh okra |

| 1 tbs ghee or oil |
| 1 large onion - thinly sliced |
| 2 fresh green chilies - slit in half and seeded |
| 1 tbs finely chopped garlic |
| 1 tbs grated fresh ginger |
| 1 tsp ground turmeric |
| 1 tsp ground coriander |
| 1 tsp ground cumin |
| 1 ½ cups coconut milk |
| 1 tsp salt |
Instructions
- Wash okra and cut stems off - leave okra whole.
- Heat ghee or oil in a heavy based pot and add onions and chilies. Cook onions until they are golden, stirring so they don't stick or burn.
- Tun heat down to low and add garlic, ginger, spices and salt. Stir well and let dry (but don't burn)!
- Add okra and stir through onions and spices.
- Add coconut milk, stir well and cover.
- Cook until okra is tender (about 10 minutes).
- Serve hot with rice.
