SPICED YOGHURT WITH CUCUMBER
A simple but perfect accompaniment with spicy curries and Indian style fried fish.
A big dollop of this gives a lift to any burger, piece of fish or chicken!

Ingredients
2 medium cucumbers |

⅓ cup unsweetened desiccated coconut |
4 tbs hot water |
2 fresh green chilies (seeded and finely chopped) |
1 tsp salt |
1 ½ cups plain, natural yoghurt |
1 tsp ghee or oil |
1 tsp roasted black mustard seeds |
½ tsp roasted cumin seeds |
Instructions
- Peel, seed and grate cucumbers.
- Add hot water to unsweetened desiccated coconut and mix well. Let stand to allow coconut to absorb water.
- Mix grated cucumber, seeded and finely chopped green chilies and salt into yoghurt.
- Heat ghee or oil in heavy based pan and over gentle heat, fry cumin and mustard seeds, until mustard seeds 'pop' and cumin seeds are fragrant. Mix with yoghurt and other ingredients.
